Resep Whole Wheat Blueberry Muffins

Minggu ini lagi coba resep-resep sehat dari Gordon Ramsay’s “Healthy Appetite”. Tergoda untuk mencoba Whole Wheat Blueberry Muffins.  Karena gak punya blueberry, akhirnya saya ganti dengan dried plum (semacam korma).

Dilihat dari komposisinya resep ini lebih sehat karena menggunakan tepung whole wheat dan olive oil (lebih sehat daripada mentega).

Alhasil muffinnya cukup memuaskan, cukup moist, manisnya cukup dan dengan rasa yang not over powering. Kalau bisa memang pake yang sudah sangat matang (sudah mulai kehitam-hitaman kulitnya).

Tips: Do not over mix; waktu mengaduk lakukan perlahan-lahan dan jangan berlebihan karena akan membuat adonan jadi keras dan bantet. Aduk hanya sampai semua tercampur (don’t go crazy here!)

Ingredients

2 large over-ripe bananas (pisangnya harus matang supaya manis)
2 cups (300 gr) flour (terigu apa saja, asal bukan terigu utk roti)
1 1/2 tsp (7 gr) baking powder
1 tsp (5 gr) baking soda
pinch of fine sea salt

1/2 cup (100 gr) light brown sugar (di Jakarta mahal! Pakai Gula Palem juga gpp)
1 1/4 cups (284 ml) buttermilk (I used low fat buttermilk)
1 large egg, lightly beaten
1/3 cup (75 ml) light olive oil
1 cup (200 gr) blueberries, rinsed and drained (I used prune instead)
1 tbsp (15 gr) raw brown sugar (I just used a packet of raw sugar from a coffee shop, that way I didn’t have to buy more than I needed)

How-To:

Heat the to 350 F. Grease a pan or use paper liners. Peel the bananas and mash in a bowl, using a fork.

Mix the flour, baking powder, baking soda, salt, and brown sugar in a large mixing bowl. Make a well in the center and add the buttermilk, egg, olive oil and mashed bananas. Quickly fold the ingredients together until just incorporated, taking care not to over-mix. Tip in the blueberries and give the batter one or two stirs.

Spoon the batter into the liners and sprinkle with the raw brown sugar. They will be quite full. Bake in the for about 20 to 25 minutes until well risen and golden brown on top; a skewer inserted into the center of the should emerge clean.

Let cool in the pan for a couple of minutes, then transfer to a rack to cool completely.
